Golden Crisp Chicken -A delicately marinated whole chicken

A delicately marinated whole chicken-air dried and deep-fried to perfection.It is more tender,crispier and juicier than you've ever dreamed. A classical choice for Cantonese banquets. If you love Kentucky Fried Chicken,you won't want to miss this one and only finger-licking-good classic Cantonese banquet dish.

Skin Mixture
3 tablespoons (45ml) honey
2 tablespoons (30ml vinegar)
1/2 cup(125ml) hotwater



1 chicken (3pounds,1350 g)
8 cups (2L)water
11/2 tablespoons (22ml) wine
1 tablespoon(15ml) salt
3 slices ginger
2 pieces star anise (optional)
4 cups (1 L) oil
fried shrimp-flavor chips (optional)
prepared Szechwan pepper salt

1.Clean and pat-dry chicken.Rub cavity with 1 teaspoon (5ml) salt:
let stand for 1 hour.
2. In a large pot.bring 8 cups water to a boil with wine,remaining
salt,ginger and star anise.Add chicken and bring to a second boil. Reduce heat to low, cover and simmer for 50-60 minutes,turning
occasionally.Turn heat off;let chicken stand in hot liquid for another 15-20
minutes.Remove,drain well and pat-dry.
3.Combine skin mixture ingredients and brush entire outside surface of chicken with mixture.Tie a string around wings and hang chicken in a well
ventilated place to air-dry for 5-6 hours.
4.Heat 4 cups oil in wok to 350ºF (180º).Carefully dip chicken into wok,basting with hot oil constantly by using a ladle.Deep-fry until skin turns evenly brown and crisp.Turn heat up to 375ºF (190ºC) for the last 3-4 minutes to ensure the browning process. Remove and drain well. (To prevent splattering of oil, have a wok lid on guard)
5.Cut chicken into bite-size pieces and serve with toasted Szechwan pepper salt. Garnish with fried shrimp-flavor chips.

Remarks

  • If you are entertaining friends,deep-fry chicken in advance. Before serving,deep-fry in hot oil again for a few minutes
  • For easier handling,chicken can be cut into two halves,then prepared the same way, but it would be less juicy.


Toasted Szechwan Pepper Salt
This is another widely used seasoning salt. It is pungent and aromatic dip which complements many dishes.

2 tablespoons (30ml) Szechwan peppercorn
1/2 cup (120ml) salt

Stir Szechwan peppercorn in a dry skillet over medium heat for about 1-1/2 minutes until fragrant. Remove and grind with a mortar and pestle or rolling pin. Heat salt in the same skillet until color turns light brown. Remove and mix with toasted peppercorns

1.Don't rely on search engines. Instead, go to trusted sources recommended.

2.Don't trust the information on a wesite unless the site clearly indicates:

  • Who wrote and reviewed the information.
  • When the informatioon was last updated.
  • What sources and references the information is based on.(Look for bibliography or reference list)
  • If information is missing,be skeptical of the site's reliability

3. Check the site's privacy policy. It should tell you that your personal information will not be given to any third party without your explicit permission.

4. Check the site ownership or sponsorship.Web sites displaying the

Web Site Accreditation seal should indicate any influence that

the owner or sponsor has on the site’s content.

5. Watch for these clues that a Website is of questionable quality:

Heavy use of personal testimonials without references to good research

Unsupported claims of a “secret’’or “revolutionary” cure

Requirement of a financial investment

Promotion of a specific drug,dietary supplement,medical device,or other product.

-There is little or no regulation of what gets published. Misleading,contradictory, inaccurate and even fraudulent information is all over the Internet.

-The amount of information available on the Internet can make your search overwhelming and time-consuming.

  • Always wear a seat belt, especially if your car has air bags
  • Never drink and drive.
  • Check with your doctor or pharmacist about driving while on medications,especially if you take insulin or an oral diabetes medication. Medications, including some non-prescription drugs,can cause dizziness,drowsiness,impaired judgment and balance problems.

The Computer hangs or is not responding

There would be times when computer just stops while you are in the middle of your work. The first thing you do is determine if the entire system is not responding or it is just the particular application you are using. Try to press the Caps Lock button, then see if the Num Lock and /or Caps Lock led indicators (in the uppermost right corner of your keyboard)light up.If they do, then it is most likely that only application you are using is the one not responding (see 1a.). If you see no reaction at all,then the entire system is not working(see 1b.)

1a.Press the following keys all the same time-

Ctrl + Alt+ Delete

A new window will open which shows the running applications and those not responding.Click the one not responding, then click End Task . That application will then close.Just open the application again by going to Start then Program Files.

1b. Press the following keys all the same time- Ctrl + Alt + Delete. When you will be prompted that pressing Ctrl+Alt+Delete again will restart your computer,do not panic. Just press Ctrl + Alt+ Delete again . Your computer really needs to restart and refresh itself. Depending on the windows version you are using,your unsaved files can be easily recovered, or sometimes, you may not recover them at all. This is the reason why you should develop the habit of saving your files, the easiest way is pressing Ctrl + S

How Do I Improve My Chances of Getting an Interview

Remember, the resume has only one purpose-to get you to get invited to an interview.

There are 2 ways to improve your chances of an invitation:

!. Quality of Contact:Do like the insects do- lay a million eggs in the hope that one survives.Handling in one resume to one employer and sitting waiting for an answer will not give you a very good chance at landing a job.You must deliver dozens,even hundreds, of resumes.

2. Quality of Contact: It is important that the person who has the power to hire you knows who you are. Just dropping off your resume and hoping it will be noticed is not enough-you want to become part of the office scenery,always around,always with your name in the employer's head when hiing time comes around.

Here are some things you can do:

  • Learn something about the company,about its strengths and problems.This will show that you are interested in the company and will give people there a chance to get to know you.
  • Make friends with the secretary and anyone else you see in the company; they are in a position to help you.
  • Find out the name of the person who hires.
  • Find out how long the applications are kept on file,where new jobs are posted,and when the employer intends to hire.
  • Visit as often as the situation permits to remind them that you are still looking for work.Don't badger people;be polite but be persistent.
  • Ask if they know of other places that are hiring and then go there.

  • Learn as much as you can about the person's illness.Talk to his or her health care providers and find out how the illness may progress.how it is being treated,and what the expected results of treatment are .Know that medications the person is taking,what side effects to effect,and wether he or she has any drug allergies. Find out what kind of problems might come up and what additional  health care  services might be needed ( for example, home nursing, hospitalization,or residential care facility)
  • Work with the person's care manager or a social worker to review his or her financial situation. If financial situation may be needed to pay for long- term care expenses,find out how and when to apply for such assistance. Find out about Power of Attorney and Representation Agreements for yourself and family member so that you can  manage his or her health care decisions are respected.
  • Talk to your  family member about his or her after-death wishes. Does he or she want a funeral or memorial service? To be buried or cremated ? Does he or she own a burial plot? Has money been set aside for these  expenses? If not ,it may be  possible for you to establish a fund for these needs. Discuss this matter with a funeral director.
