Chocolate Rice Pudding
3 cups milk
2/3 cup uncooked long grain rice
1/4 cup sugar
1 tsp vanilla extract
1/2 c chocolate chips (semi or milk, your preference)
In a heavy medium saucepan bring the milk just to boiling, stir in
the rice. Cover and cook over low heat for 30-40 minutes or until most
of the milk is absorbed, stirring occasionally.
Remove saucepan from heat and stir in the sugar and vanilla extract.
Add chocolate chips and stir until melted. Serve warm or chilled.
